• 5 eggs
  • 1-1/4 cup oil
  • 1 can (15 oz) pumpkin
  • 2 pkg cook-n-serve vanilla pudding
  • 1 tsp baking soda
  • 1 tsp cinnamon

Beat eggs in mixing bowl. Add oil and pumpkin, beat until smooth. Combine remaining ingredients, gradually beat in pumpkin mixture. Pour batter into 5 greased 5 – 2-1/2 – 2″ loaf pans.

Bake at 325 for 50-55 minutes or until toothpick inserted comes out clean. Cool for 10 minutes, remove from pans to wire racks to cool completely. Bread may also be baked in a loaf pan (greased) for 75-80 minutes.
