Makes about 16 pancakes

  • 2 cups Bisquick mix
  • 1-1/2 cups (12 oz can) undiluted evaporated milk
  • 1/2 cup solid pack pumpkin
  • 2 eggs
  • 2 Tbls firmly packed light brown sugar
  • 2 Tbls vegetable oil
  • 2 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1 tsp vanilla extract

Combine all ingredients in medium bowl. Beat until smooth. Pour 1/4 to 1/2 cup batter onto heated and lighting greased griddle. Cook until edges are dry. Turn. Cook until golden. Serve with syrup, honey or jam.
